Blackcurrant Sauce for Meat
Ingredients:
• 200 ml blackcurrants (fresh or frozen)
• 100 ml red wine
• 1 tbsp honey or sugar
• 1 tsp balsamic vinegar
• 1 small shallot, finely chopped
• Olive oil or rapeseed oil
• Salt and black pepper to taste
Olive oil: Adds a soft, slightly fruity note to the sauce. Ideal if you want to avoid animal fats and include healthy fatty acids.
Rapeseed oil: A more neutral flavor, excellent source of omega-3, and works well if you want to preserve the berry-forward profile without added aroma.
Instructions:
1. Sauté the shallot gently over low heat.
2. Add blackcurrants, red wine, honey, and balsamic vinegar.
3. Simmer on low heat for about 15 minutes until the sauce thickens.
4. Season with salt and pepper.
5. Optionally, strain for a smooth texture.
Perfect with game, beef, or even grilled halloumi!
