Traditionally, quark is low-fat (less than 0.5% fat).
Quark contains about 60 kcal/100 g and is high in protein (around 10%).
Quark is also a good source of calcium, vitamins B2 and B12, and vitamin D.

Legally, quark is classified as an unripened cheese, that is, a fresh cheese, which also includes cottage cheese, mozzarella, and bread cheese. Quark is made from pasteurized, skimmed milk, which is curdled through lactic acid fermentation. The whey is separated from the fermented milk. Quark is usually not further processed. Fresh cheeses can have a shelf life of several months thanks to further processing, whereas quark does not last long.
