Sour cream (crème fraîche) is made using a starter culture originating from French cuisine.
The fat content of Finnish sour cream is usually 28 percent. Finnish sour cream may also contain modified corn starch and thickeners such as guar gum, carob bean flour, and pectin.
Sour cream is used, for example, in soups, pasta, and pies, as well as in cold sauces and spreads. It does not withstand prolonged heating.

A sourdough starter from Russian cuisine is used to sour cream, or soap cream. Finnish sour cream has 42 percent fat. Smetana withstands heating well and foams when whipped.

A sourdough starter from French cuisine is used to make crème fraîche. Finnish crème fraîche usually has a fat content of 28 percent. Finnish crème fraîche may also contain modified cornstarch and thickeners such as guar gum, locust bean gum and pectin. Crème fraîche is used in soups, pasta and pies, as well as cold sauces and pastes. It does not withstand prolonged heating.

Despite its name, sour cream is sour cream with a fat content of 10 percent. Crème fraîche is used in cold sauces, dips, doughs and fillings for sweet and savoury pies, for example.

LDL-kolesteroli = "paha kolesteroli"; LDL:n osana oleva kolesteroli, jonka korkea pitoisuus veriseerumissa/veriplasmassa on sepelvaltimotaudin ja yleensäkin ateroskleroosin (valtimonrasvoittumistaudin) yksi kolmesta tärkeimmästä riskitekijästä

Steroli = kasveissa esiintyviä, molekyylirakenteeltaan läheisesti kolesterolia muistuttavia steroleja, jotka eivät imeydy ihmisen suolistosta ja jotka myös estävät kolesterolia imeytymästä

Ingredients: pasteurized cream, modified corn starch, thickening agent (pectin), starter culture.

A 100 g serving of crème fraîche contains 176.1 kcal (737.1 kJ) of energy, with 17.0 g of fat, including 11.6 g saturated, 3.9 g monounsaturated, and 0.4 g polyunsaturated fats. It has 3.1 g of carbohydrates, all of which are sugars, 1.9 g of protein, 0.2 g of salt, no fiber, and 1.8 g of organic acids.

It provides vitamins such as Vitamin A (137.3 µg, 20% of the target), Riboflavin (0.1 mg, 8%), Vitamin B12 (0.1 µg, 6%), small amounts of Vitamin C, D, E, and Folate.

Minerals include Phosphorus (66.0 mg, 11%), Iodine (4.2 µg, 3%), Potassium (72.0 mg, 2%), Calcium (100.0 mg, 13%), Magnesium (2.9 mg, 1%), Sodium (60.4 mg), Selenium (1.3 µg, 3%), and Zinc (0.1 mg, 2%).
