Eggplant and Other Delicacies
Sauté leek, garlic cloves, carrot, parsnip, celery, and red bell pepper in extra virgin olive oil according to the cooking time. Add the spices - black pepper, salt, rosemary, basil. Add a splash of dark rum.
Brown the ground meat, add the previously prepared eggplants (from your own freezer) with black pepper and salt.
Chop the potatoes and add them to a baking dish with all the other ingredients.
For extra liquid, I heated some water and mixed in a generous spoonful of potato starch along with a little splash of rum.
(Finnish cream = Home Kitchen SirSiri, water + rum or some other alcohol)
Oven at 180 degrees Celsius
- Sauté according to cooking time = add the more slowly cooking ingredients to the oil first over low heat
- Amounts of ingredients - adjust creatively by feel according to your own needs
