Rosamunda is a floury, light yellow-fleshed table potato. The tubers have red skins, are large, oval, and smooth. Best known as a baked potato, but also suitable for many other uses, e.g., as mashed potatoes.
Potatoes are very healthy food. According to the latest research, regular consumption of potatoes lowers blood pressure and reduces the risk of heart disease. They are completely cholesterol-free and contain, among other things, vitamins C and B, magnesium, zinc, potassium, copper, and iron.
Potatoes do not contain any artificial additives. Studies show that potatoes increase serotonin production in the human brain. Serotonin, in turn, has been proven to reduce stress and depression. Potatoes are also lactose-free and gluten-free.
Potatoes contain half as many carbohydrates as rice and 80% less than pasta. Boiled potatoes have clearly the fewest calories. Potatoes are 99.9% fat-free. Therefore, potatoes are suitable even for a weight-loss diet when eaten with vegetables.
Potatoes use only 1/6 of the water for growth compared to rice. Studies also show that the carbon footprint of potatoes is significantly smaller than that of rice.
