Carotenoids and other fat-soluble vitamins are stored in the body, so balance is key to health.

Vitamins and minerals in carrots:
• Vitamin A (beta-carotene): over 8000 µg → up to 300% of the daily requirement
• Vitamin C: about 6–6.5 mg
• Vitamin K: a small amount
• B vitamins: including B1, B2, B3, B6, and folate – small amounts
• Potassium: about 390 mg
